Japanese water stones. No machines. No heat. No shortcuts.
Knife sharpening the way it was meant to be done
By hand · By feel · By stone
Belt machines generate friction heat that destroys the temper of fine steel — especially thin Japanese blades. Cold water stones keep the blade cool throughout. Your knife's edge geometry and hardness are preserved exactly as the maker intended.
Machines are aggressive. They remove far more metal than necessary, shortening the working life of your knife significantly with each visit. Hand sharpening removes only what needs to come off — your knife lasts decades, not years.
Japanese water stones progress from coarse to ultra-fine grits — finishing at 6000+ grit for a mirror polish and an edge that will genuinely surprise you. Pull-through sharpeners and belt grinders simply cannot replicate this result.
Every blade is sharpened by hand. No surprise fees, no upselling. Prices reflect the care taken with your knife.
