Why water stones
change everything

No heat. No damage.

Belt machines generate friction heat that destroys the temper of fine steel — especially thin Japanese blades. Cold water stones keep the blade cool throughout. Your knife's edge geometry and hardness are preserved exactly as the maker intended.

Minimal metal removal.

Machines are aggressive. They remove far more metal than necessary, shortening the working life of your knife significantly with each visit. Hand sharpening removes only what needs to come off — your knife lasts decades, not years.

A finer edge than any machine.

Japanese water stones progress from coarse to ultra-fine grits — finishing at 6000+ grit for a mirror polish and an edge that will genuinely surprise you. Pull-through sharpeners and belt grinders simply cannot replicate this result.

Bring your knives to me or arrange a pickup. For 10 or more items I'll come to you anywhere in Winnipeg for a flat $15 delivery fee.

Assessment

Each blade is assessed for edge condition, geometry, and any chips or damage. You're quoted before work begins if repairs are needed.

Stone progression

Sharpened by hand through a full grit progression on Japanese water stones — coarse to ultra-fine. Each stage is checked by feel and light reflection.

Back in your hands

Your knife is returned sharp enough to raise eyebrows. Most turnaround within 24–48 hours. No mystery, no machines, no heat.

Sharp or it's free

If your knife isn't noticeably sharper than when you brought it in, you don't pay. No questions, no awkwardness. This is a promise, not a footnote.

I won't take on what I can't do well

If a knife needs work beyond my current capability — unusual geometry, severe damage, or a style I'm not yet confident with — I'll tell you upfront. You'll never get a knife back worse than you sent it.

Your knife is treated with care

Hand sharpening only — no belt grinders, no machines. Every knife gets the same attention regardless of what it cost. I handle each one as if it's my own.

Honest turnaround

I'll give you a realistic timeframe before I take your knives. If anything changes, I'll reach out — you won't be left wondering where your knives are.
